In fact, mango is considered a true superfood, being rich in polyphenols, carotenoids and vitamin E, which are powerful antioxidants (Lauricella et al, Nutrients, 2017), onion is a natural antibiotic, is anticancer and protects blood circulation (Griffiths et al, Phytother Res, 2002), finally, mozzarella provides proteins making the dish complete from a nutritional point of view. Ingredients320 grams of wholemeal durum wheat pasta in a short format, such as farfalle or fusilli1 mango1 red onion200 grams of cherry tomatoes2 tablespoons pitted green olives2 tablespoons of capers100 grams of cherry mozzarellaExtra virgin olive oil1 lemonPink Himalayan saltVinegarPepperCut the mango into cubes, finely slice the onion, cut the cherry tomatoes and olives in half. In a large bowl, pour the mango, onion, cherry tomatoes, olives, capers and mozzarella. Season with extra virgin olive oil, a grind of pepper, a pinch of salt, a teaspoon of vinegar and a teaspoon of lemon juice. Mix and leave to rest. Separately, boil the pasta and drain it al dente. Run the pasta under running cold water, drain well. Combine the pasta in the bowl with the dressing. Stir and serve!
