
Christmas pizza is also called fig pizza and is a typical Italian dessert during the Christmas period. And, we add, it is simply delicious with the Christmas aromas that blend and chase each other in a fragrant and yummy spiced bread. No butter is used but only extra virgin olive oil, the sugar is whole cane sugar and the flour is unrefined. In short, a true delicacy that supplies the body with energy and puts you in a good mood!
Ingredients
500 grams of semi-wholemeal flour
3 grams of dry brewer’s yeast (or 10 grams of fresh brewer’s yeast)
80 grams of delicate extra virgin olive oil
50 grams of whole cane sugar
220 grams of water
300 grams of dried figs (or dried figs and raisins)
300 grams of dried fruit (walnuts, hazelnuts and almonds)
10 grams of bitter cocoa powder
1 teaspoon of cinnamon
Pinch of nutmeg
Pinch of cloves
1 organic mandarin
1 organic lemon
Rum, 1 shot glass
Cut the dried figs into coarse pieces and soak them in water. If you like raisins and want to include them in the preparation, this is the time to combine them with the dried figs. Separately, start preparing the dough. Pour the flour and sugar into a bowl. Dissolve the fresh yeast in water. If you are using the dry yeast add it to the flour. Add the oil and the fresh yeast mixed with the water. Knead with your hands until you obtain a smooth and homogeneous dough. Place the dough in a bowl, make a cross cut on the surface, cover with cling film and let it rise for a couple of hours. In the meantime you can dedicate yourself to the filling. Chop the dried fruit and pour it into a bowl. Combine the grated lemon and mandarin peel, the squeezed figs, the cocoa, the spices and the rum. After two hours, take the dough and roll it out using a rolling pin on a floured work surface. Distribute the fig mixture in the center. Close the sides of the pastry bringing them towards the centre. Knead again with your hands to blend the filling and dough. Roll out the dough into a circular pan with a diameter of 24 centimeters and let it rise for a further couple of hours. Bake at 180° C for 40 minutes.
